this is already possible using power automate (flow) (sharpoint / teams / onenote / mail etc ...)
This would be phenomenally useful! Being able to see quickly who has worked on which pages would be such a time saver.
Wouldn't there be great if there was a "hub" page in teams or onenote that summarized all of the updates for each notebook. I could quickly see that 10 students edited a page in one class and in the same class, only 2 edited a different page. THen on the same screen or maybe with a single click to view a different class - boom, I can see how many students edited etc. the same pages.

All my teacher friends using OneNote are trying to find out how to do this. One person’s turns bold but the rest of us can’t get that function :(

I would like it, if a page is bold when a student has worked on this page. This isn't available for Mac and I would be extremely useful.

In Onenote 2016 the student's name, section group, section and page all became bold in the teacher view when they edited their book which made it REALLY easy to track who was doing what. This simple feature makes it so much easier than reviewing page by page or checking each book.
