Start typing a note, then easily decide where to add it after
Regardless of the platform, when I want to add a quick note before I forget, I don't want to search through my notebooks, sections and pages to add it. It would be great to add a quick note, then have an easy way to add it somewhere. Currently there are quick notes, but you can't easily move the note through a drop down for example. Especially helpful for mobile.

@matthew - try Windows+N, does exactly that (Desktop OneNote).
I agree with Matthews comment and would take it one step further as not only should you have the options to create a quick note in Windows but the concept should extend to all platforms. Ideally you would have a preference setting where you could set the default location for these types of notes, maybe even by platform or device. For example, my default notebook on Windows might use a different notebook than I would use on my Android tablet or my iPhone.
This is huge. Soon after Windows 8.1, I found myself thinking, "Windows really needs a note app". Only a little bit after did I even think of the fact that that is OneNote--but it isn't a "sticky note" app -- it's a "note book" app. It has very strong points in organization, but really loses out on the disorganized, jot something down and tag it for later side of things. I just need somewhere where I can (1) quickly jot something down and (2) not feel like it's going to be an organizational nightmare later. Right now it feels like neither. The Surface Pro 3 is the first effort that I've really seen going that way--but that's only on Surface Pro 3. The app needs a "+" button somewhere at the very top level that is meant to quickly add a note at any point within the app: no need to navigate or think -- just hit '+' and then type away -- *in a flyout box* (NOT a full page--you should resume instantly to the page you were on). Hit save and away it goes and you're back to whatever you were doing. In upcoming versions of Windows, this could even built into the OS in some way, a button somewhere that you can just tap, add a note in a flyout, add on a few tags to know that you can find it later (*without needing to go through a list of pages) and then keep doing whatever you're doing knowing that it's saved. THAT would be huge. THAT would provide massive competition against EverNote.
